his cuts are not very regular... the first cuts they are but when he starts cutting the last part of the celery and his fingers come closer he kind of starts losing control and the cuts become thinner and thinner which is not right..
Yeah, I also wouldn't recommend it for people with little practice, honestly. To do something like that, you'll need a good feel for your knife, your area and the food item you're cutting, and how it cuts. If you're trying to do that with say, celery with a horrible knife (Blunt and/or rusted), in an unfamiliar kitchen, you'll do poorly and most likely cut yourself.
cutting is simple, people just have to remember to take their time, thats why you practice in a kitchen you wont have the luxury of time so when you practice on your own take the extra time ^_^ also i hate the searing sensation of getting cut...so 5 extra seconds to save me a pint of blood is worth it

Done properly, its probably the safest method to use a knife for chopping.

Won't he cut his thumb that way? and if his middle finger slips, it wouldn't look too good...
