a few tips, when recording on mame you can set the frameskip up to 4 or 5, that means less cpu used by mame and smoother looking video, youtube works better at 30fps so try to make it record at that speed.
Also try to use fraps and record mame in full screen, windowed takes more resources than full screen when recording.
