He's a well known and respected writer and critic amongst the "food publishing" community. He's definitely not "devoid of passion"

  • Yes, clafoutis is with black cherries only and flaugnarde is with all the rest of fruit. I'm sure this recipe will taste good but unfortunately has little to do with Clafoutis which is made out of white bread soked in milk. Yolks, sugar, butter and almond powder are added and whisked up. Last, meringue is incorporated to soften the mixture which will be poured on top of the cherries.Batters are for pancakes...not for desserts from Limousin region in France.

  • While a clafoutis is technically made with cherries (I guess that would make this a flaugnarde?) , and is as much custard as pancake, this is a very tasty and simple recipe and As far as videos go, Mark Bittman is always a pleasure to watch. (actually, I can't believe he passeed up the opportunity to say '"flaugnarde.")

  • @WoeAndSorrow it is actually meant to be made with berries, so go on ahead. i use strawberries, for example.

  • I do not understand your problem, clafotís are exactly what he says they are: fruit baked in a batter, which--no matter what your problem is--resembles pancake batter.

    Do you have a problem with someone being approachable? Wow, what a concept, Mr Bittman is trying to speak in a way that people understand. Get off your high-horse unless you want to teach us from your awe inspiring culinary wisdom.
