This is not water actually, its called hot ice. It usually requires some small physical shock to crystallize, though the temperature difference between it and the ice probably did the trick. Its probably also diluted, since it gets really hot and would badly burn his hand.

@rbeowulf lol, no, this is not the "hot ice" this is called super cooling, basically it is when you put distilled water under tempatures of lower than 32 degrees, but it cant turn to ice because ice is formed on impurities, and distilled water has none, so when it touched the ice, it became impure and started to form ice crystals around the impurity.

It's super-cooled water. Regular water, but filtered by osmosis. You cool it really fast to below 32 degrees Fahrenheit, and it doesn't freeze. Then whenever you disturb it (with a nice thump to the bottle, or touching the water itself) it 'freezes' instantly. Not really frozen, just thick slush.

Easiest, fastest way to super-cool water is to put a bottle of water in a bowl of ice+salt.

If is till liquid beer but is hella cold then you can do next step, after getting it super cold, open it and take this little ice you can see all over the bottle with your nail, take a lot of this little ice to make sure it works then introduce it into the beer and see what happens :)

This is how they did it.

They put water in a pan that they heat and then puts in the pan Sodium Acetate. Then they mix it until the Sodium Acetate has melted so it looks like pure water. Then they put it in a bottle and put the bottle in the freezer. It will not freeze. they take it out from the freezer and it is NOT frozen. Once it makes contact with water or anything if it is more consecrated made it will freeze instantly.

Get a water temp to a couple of decimal clicks above zero degrees celsius (32degrees F), it's should still appear liquid. However touch it or get it out of the fridge and it will freeze right up. You won't really need the ice to make it freeze.
