It is not true that shops/cafes/restaurants in Jerusalem HAVE to be closed on Shabbat. It is out of free choice. Most of the shops do close of course out of respect for the Shabbat, or at least for commercial reasons since they would loose their religious clients if they would be open on Shabbat.

While it is true that Israel wants a Jewish state, Palestinians are willing to live in a State of all its citizens. Palestinian Refugees are willing to go back to their homes, towns and villages and live among others, no matter what their ethnicity is.

The PLO was the one calling for a secular democratic state (of all its citizens) on all of mandate Palestine. Again, Israel rejects this solution.

The Israeli occupation is not the legal authority. No country in the world recognizes Israel's authority over Jerusalem except as an occupying power. That's why no country in the world has its embassy in Jerusalem.
