i fillet my salmon like tuna. A buddie of mine that used to work at a sushi resturaunt said there is another way how you filet the bone off the fish i think he's talking about your way. Great job..
Do you have a video of you filleting tuna.?? Or anyone for that matter. I sure would be interested in seeing that since tuna grow pretty big, don't they??? Or are we talking 20 pounds or so.
Everyone I am overwhelmed with your praise. In retrospect, I should have mentioned that it is also important to bleed the fish right after catching, otherwise the blood in the fish turns white when the fish is being cooked. This could leave the fish with a less than desirable taste.

That is the coolest way to filet salmon I have seen. Nice job and I will be learning it. The way I was doing it doesn't waste any fish either but I gutted the fish first and it takes much longer. Thanks for the video
i've never seen salmon butterlied before. i occassionally butterfly trout, but i keep the two halves connected along the back, as opposed to the belly as in your technique. very interesting.

With regards to pinbones, using tweezers, is that the correct spelling? you can remove the pin bones but thats too much like work. They come out easy when cooked. Otherwise we can remove them like we do when filleting ling cod. Cutting alongside the pin bones, but then the fillet doesn't look that good.
great video guys, but just one thing. I would have RAN into the house and grabbed my 12gauge and blasted the annoying ass fucking bird going apeshit in the background!!! LOL

brosme is a very hard boned fish and a bit slimey you can watch my vids im trying to do all the fish,lol anyways im ramskrall type me in and enjoy
