I used a version of SimFinger that I patched myself. But PhoneFinger and similar tools should also do the job. Recording of the Simulator has been done with Screenflow.
Waveboard is a bit more than setting a springboard bookmark. As shown in the video there is a custom browser for external links. On shake you also get more actions. And in the next release Push Notification will be introduced.
In the meanwhile waiting for the app to show up in the AppStore you might want to test the Mac OS version of Waveboard.

This seems to be the regular webbased iPhone version for Google Wave, not an application.
