It's a cultural thing in Asia: the food is said to be the best when it's the freshest, in turn meaning when it's alive at the last possible second. I don't really like that they made a competition out of doing this, but this isn't something unethical to these people. We boil lobsters alive yet we don't see this as cruel treatment, and they are boiling or frying fish alive. It may be cruel to us or even un-necessary, but it's the circle of life
