Perfect. If you love raw clams, master this technique and you can shuck a dozen in just a few minutes. I"m a slow learner so I had to shuck 100 clams to get it down pat. I use a rag in my left hand to prevent sores and bruises. The key is to squeeze with the hand holding the clam. The hand with the knife does minimal work. Sometimes it's hard to find a clam knife. Go to your local working class or Chinatown/Asian kitchenwares store and they'll have it.
Never use any knife other than a proper clam knife! Actually clam knives are purposely made to be relatively dull, so it's much harder to cut yourself. Also, use a heavy towel or glove to hold the clam to protect your hand.
@metroseafood1 Thanks. I actually did open clams successfully after watching this. I did cut my thumb, but it was a minor injury and probably due to me not using the correct knife.
Do you know of any major chains that carry shucking knives? I've already checked Target and Macy's. Would a paring knife work?
I always have the toughest time opening clam using a regular steak knife. I would like to know does matter the size of blade to use, I'd notice a 7 1/4 blade but wasn't sure. I always purchase large clams to eat raw and would really enjoy more time eating and less time trying to open them.
This video is awesome! I love Metroploitan Seafood, they have the best selection of fresh fish and everyone there is so nice and knowledgeable. I never buy my seafood anywhere else!
this video makes me hungry, Thanks for sharing.
