A video is a series of still images with a sountrack layed over the top, it would be time consuming but you would simply photoshop each frame. You could have each of the notes when struck and not struck backed up etc and simply cut and paste for each frame/

Also, i never compared it to a real guitar (but there are plenty of people who think there are strong corilations between the two, which is ridiculous).
