When episode 3 aired, i knew this scene was coming. I was a tad disappointed when they changed it so he doesnt say Dahhhhhhhhhhleks, he only says Daleks.

Quite possibly the lines Matt Smith are speaking are simply stand-ins, not his actual lines. For example, if they're shooting a scene from two angles using different takes, one shot of the doctor, one of this "professor", then the "professor" take does not need Smith's full performance, he just needs to say the words in a monotone to give the "professor" actor something to react to and time his responses.
