does anybody know what tools they use to shape,smooth,shine,straighten,sharpen the sword after forging it ?? What are they called?I want to learn about "metal modeling" tools but don't know the definitions.

Yes. China is where virtually all Japanese style swords are made. The Japanese have nothing on the scale of this factory. Unlike China, Japan does not create swords in a factory setting. They are entirely artisan workshop based. They produce less than 1% of katana made each year.
Quality is much higher in Japan, but so is the price. Most forges produce only a handful of swords each year. Prices start around 7,000USD and climb into the six figures from there.

China = Mass producted = only medium/hard steel (maru method) = not good
Japan = Lightly producted = all kinds of types, from Orikaeshi Sanmai to Soshu Kitae = best swords.
