I think frosting it with an Italian buttercream would have been a little bit neater. That's what they do in bakeries to finish off their ice cream cakes. Just a suggestion!

(Continued v v v) You can ice as desired. If you choose to ice with ice cream, let it soften a little so its easier to spread and smooth then refreeze the whole cake. I just wanted to share an easier method.

Hi, I just have a suggestion for putting the ice cream cake together. After baking and leveling the cakes, wrap them in plastic wrap to assure freshness. While letting the ice cream sit out to soften, line the cake pan with plastic wrap. Once the ice cream is soft, pour it into the lined pan, wrap and freeze. Once frozen, unwrap cakes, place bottom piece on the plate, unwrap ice cream, place on top and place the top layer of cake. Wrap it together and refreeze.

I think you should use a metal mixing spatula for the smoothing, the surface smoothing area is much wider and will leave it looking more professional. Nice video though!
