The reason he flipped the steak 4 times was to get those diamond grill marks. This is also the reason he paid attention to the 10 and 2 o'clock postions.

Actually flyguy you're right. It's best to flip only once. When flipped too much the meat gets almost broiled, not grilled. That's the reason for the one time rule. To get the diamond grill marks with only one flip, do this: Keep the steak on the same side but just rotate it from 9 oclock to 6 oclock, never turning it. Repeate on the other side.
ive grilled with both types, gas and charcoal. i prefer gas because its consistent and they heat up faster. as for the smokey flavour, i cheated using liquid smoke.
although my fav way of cooking is still using a really hot cast iron skillet and finishing it in the oven, less scorched bits and more even browning.
I like to wrap mine in foil after I removed it from the grill.I let them sit for the 5 minutes.The juices flow out because it's still cooking and seasons the meat even more right before eating.

He used a non-aerosol oil sprayer. You pump it your-self and they are designed for gilling.
