    The end result looks like someone bought a can of pre-scrambled eggs and dumped it on a plate.

    It is quite slow so that you get the point. Use butter, no creme is necessary and keep the scrambled eggs moist and creamy. It is delicious with toast, and some fresh cut shives on top. good luck.

  • @jomacoam Actually I did,he popped up in my restaurant while back and he did a complete overhaul about 70% and 1 new employee.I was able to learn things that our staff and myself were unaware of. His attitude is intentional and really made my cooks much better and he laid us with some good easy foods to make. As a result of his advice and help,my restaurant has exploded sky high with customers more from breakfast thru lunch and dinner.My profit margin is at 97%Gordon Ramsey is GOD! Praise him..

  • @leredsock It's called Pepita's Cafe,National City,Ca. and after the owner passed away I went to work at The Hotel Del Coronado San Diego,Ca. for 6 years with Master Chef Guinto Palermo.

  • this was in January 2007. I was a breakfast cook only for 1 month. A lot has changed since then, belive me...

  • just use butter or clarified butter, creme fresh is just a plus that is not really necessary. Salt, pepper (and chives) at the end and thats it.

  • Sure, that is good as well, freshly grounded black pepper is much better then the white one. Has more flavour and less 'bite'.

    You may try with grounded mace , the nutmeg outer shell, but only a little tiny bit.

    Scrambled eggs are a endless recipe for one with imagination and good taste.

  • Too much cream for my taste, salt too early and it looks like slightly on the overcooked side right before you add the creme fraiche. But to each his own. You can do pretty much anything you want with eggs. I can't really talk though, because before I saw Gordon Ramsey's scrambled eggs, I was butchering them and making them hard.

  • i like your honesty. These scrambled eggs were made almost 2 years ago by me, when I started making them. And it was before I saw the Ramsey video too. Well, I have evolved since then and this video serves as an example of how one may start getting them better than before. By experience there are no perfect scrambled eggs. Each person likes them in a different way. The French scrambled eggs are made using a 'bain-marie' so that the eggs are really evenly creamy..Always make it with your heart.

  • ok, something so simple and you cant even get it perfect. First you don't add salt so soon, cause you will cause the egg to become watery. Second you add creme fresh to cool down the egg so it doesnt over cook. You added it and start heating again, which defeats the purpose of that...

    The best way is that you heat the eggs enough so that the creme fraiche is cooling the creamy egg mix without getting it too moist, just enough... and don't heat it up again... like I did here...

  • I love eggs they are my favorite food besides meat. I asked for and ostrich egg for my birthday, it equals about 24 eggs and tastes EGGxactly like chicken eggs.

  • Try to watch "scrambled eggs 2" and you'll see that I am not using creme fraiche. It can be used and it gives a nice taste but use it when you ar finished just to stop the heat and to make them even creamier

  • no, I am a cook, and I saw his video as well, but I did it like that because I read it in a old French recipe book. And this was long before Ramsey's video.

    And I must say that I am a fan of Ramsey, but he has taken this technique from his teaching Chefs, I am sure, because it is a old technique, and a perfect one. Try it yourself and you'll see...

When it begins to come together add creme fresh. Keep stiring. Season. keep stiring. small dollop of creme cheese. Add finely chopped chives. Serve. gorgeous.

  • You are right. It is good to cook gradually, taking off and putting on the heat again. Keeping the eggs moving is important as well--this will make the eggs creamy and well formed.

  • well, this stove has heat in one spot so that there its very hot and the further away you have the pan the colder it is. But basically it is as hot as your home stove, you just have to control the pan by making it go in and out of the fire as you get the eggs done.

  • I cooked it in a Moltoni Stove, french made. This is the heat plaque, where there is a spot which is hotter and as you go away from it, it gets not so hot. So there is heat under the frying pan.

    It is possible to do it without heat, using alcohol in the egg mix, it looks scrambled but it will taste like crap !

    Use the heat instead, its better !

    If you don't have a Moltoni stove, use your own and control the heat by approaching and removing the pan from heat.

  • Yesterday I made some like these, sprinkled with chopped chives, with bacon and toast. Believe me, I was not hungry after I ate them. Besides, chunky or not, 2 eggs are 2 eggs, right?
