to sound like an ass, i do know. i have been around the butcher/farm business my whole life. i know at least in my home these animals are family. we are out at 5am feeding. we are out at 2am helping with births. we are doctoring wounds and illness. we bottle feed them, we get them walking. these animals are our livelyhood and they are treated well.

What he did with that fish wasn't even being a chef. Cutting a few slices into it then dipping it in boiling oil for a bit isn't exactly difficult. The way he descaled it as well would leave so many scaled still on the fish.

i think what the issue is here, is difference with what people have grown up with. personally, the fish raised an eyebrow, but, i haven't tried the meat, so i can't say anything. i agree with gorisan, for now. i grew up with most of my meat being beheaded first. however, recently i had foie gras. that's much worse then what they did to the fish. it actually didn't taste too bad. i guess, we taste and learn. try everything once.

The fish is not dead. If he put the whole fish including head in the oil, brain functions would cease, i.e. dead. However, it would then stop moving which would have ruined his desired "effect". Every animal we eat obviously has to die first, but I don't think it's necessary to dip a cow in hot oil up to it's neck before it's brain is still firing.
