Actually the movie was actually accurate with what they SHOWED. The movie doesn't exactly have them living this way for years, 2 maybe 3 days tops is the span of the movie which is reasonably long enough for these people to survive as the centipede. And the movie did address that this wouldn't really work in the long run with some bits.

Is the viability of the subjects following the surgery possible? No. I think its safe to assume that if someone shits in your mouth you wouldnt be able to choke it down w/o vomiting. W/no escape for the vomit, you'd likely aspirate and die.

If you DID manage to choke it down, it serves no nutritional purpose. Even IF you were on an IV for nutrients, you'd also need to be on wide-spectrum antibiotics & those would eventually make the situation worse.
