I only make pinto beans because they are the only ones I like. Anyway, when I do make beans I always add the salt right at the beginning. I never have a problem with cracking.
I hinted at this in my comment for Part 1, but no true-blue Bostonian would think of adding jalapenos or cayenne pepper to a pot of baked beans. Boston baked beans are supposed to be a distinctly sweet side dish to...well, whatever the Puritans ate, but my Boston born-and-raised soul thinks hot dogs and Red Sox games on the radio while sitting outside on the front porch.
@fae430 I like it that way, myself. It's definitely better than the premade variety. When I actually bought some premade, it was the first time in ages that I accidentally let the food go bad.
Tahini is the only way to go for good humus. I know Alton was trying to make the recipe more accesible to the average American, but the flavor is really very different. Its worth the extra money and effort to find it.
No wonder British 'baked beans' always look soggy - they don't have any sugar or molasses- they just chuck a can of chopped tomatoes onto some white beans and put them in a can!
Nice visual aid of the intestinal system without being gross : )
try kombu, this japanese sea vegetable aids digestion of those nasty protiens. without destroying the flavour or texture and it also adds a slight ammount of salt! it also dissolves naturally.

"Look what you've done"? That has got to be Alton's biggest failed attempt at being funny. Oh, well; we all love him anyway!

8:15 I wonder why he chose not to use the traditional Tahini?
Maybe because it's more widely available?

at 08:20 - please PLEASE use Tahini and not peanutbutter,
it's less calories and so much better for you.
it's not only about tradition -
peanutbutter is almost nothing but fat.
Tahini (sesame paste) will give you also calcium and iron !
and leave the parsely for garnish.

Is it just me, or does the old food science lady remind you of Yoda?
I think its the accentuated marionette lines and her cadence.
