it's a redox reaction. the hydrolyzed sugar reduces the permanganat ion in alkaline environment in the first step to the greenish manganate ion, then it further reacts to manganese dioxide, which is the yellowish colour. But in a acidic environment the permanganate reacts to the colourless Mn^2+ ion.

i kinda get the idea of this trick...since the color only ranges along the blue region, maybe this experiment took the opportunity to use the changing basicity of the mixture and used KMnO4 as a color indicator...the thing is, I still can't figure out why the mixture changes in its basicity, maybe due to the sugar's oxidation rate?

You can buy KMnO4 at Petco. They sell it as Jungle Clear Water, in the fish department.

Ah yes can see why you might think this is a pH changing experiment :D ... but it is not.
The colour change is as due to the reduction (gain of electrons) or change in the oxidation state of the Manganese ion.
1) Purple --> Green is due to the reduction of the Manganese ion and the oxidation of the sodium hydroxide.
2) Green --> Red is due to the further reduction of the Manganese ion and the oxidation of the sucrose (sugar).
