It's a joke from earlier in the episode. The hand trick is something raj can do but sheldon can't so it really bugs sheldon. You do it by putting your hands together as if praying, folding your middle finger down and then twisting your wrists so that one hand is facing up and the other is facing down but still interlinked.

i hate how white people say the j in "raj" they pronounce a fricative instead of the affricate. it's more natural-sounding, even in english, to pronounce the j as an affricate as it normally is in english. but stupid white people pronounce it as a fricative because they think they're supposed to make it sound more foreign. it is very subtle linguistic discrimination. pronounce the j in raj like an english j, people, because that's what it actually is in the original language.
