I love fresh veggies + especially salads during the summer time. In the winter time, it's soups or steamed veggies. I should add, that I'm not a vegetarian, but trying to curtail my meat intake. Not for dietary reasons but because of the atrocious conditions that most animals live in in industrialized farming.
@55ella2007k Same here Sis, in the fact I'm not a vegetarian, though I'm slowly moving in that direction. Or shall I say aiming for 95% vegetarian for dietary reasons and against the way animals are treated in factory farming.
This looks tasty... You can definitely get full off of raw foods... also legumes and brown rice will do it too..... you are doing some wonderful things over there....

@msfullroller i'd be sooo glad!! I'm planning to try, but will cut them really thin as i can't imagine it raw. lol. love it in lasagna and roasted though. also it did some onece with a cream cheese stuffing. was great!!
@abbeymore1 Yeah I cut mine as thin as I could and then chopped those slices up more. Yellow squash is quite mild but go ahead and mix your salad dressing in after you've cut everything up. By the time you get to the table and start to eat, it will have 'marinated".
Oh my goodness YUM! That salad looks so appetizing! That looks good! I'm telling you, you are about to make me start increasing my raw. I eat salads but, I can definitely stand to put more different things in it! Thanks for sharing!
@queenrella77 You are so welcome Sis! I'm really wanting to see you take charge of your health as I feel that will help you not on your weight loss goals but your RA , and overall health as well. Also, to one step at a time as I'm learning, to dispel the myth that it is expensive to eat healthy. The reality is it's much much more expensive to get sick and then maintain that illness.
@msfullroller Yes, you are so correct. I am aiming to have better over all health. I have to take one step at a time....not to stumble! {LOL} No seriously I use to think that it is so expensive to eat right. Really it isn't. Especially since I am omitting things from my lifestyle. I can now re-arrange the funds to more healthier choices. Thanks so much for your care with my disease. I would much rather manage a different food list, than a increase in prescribed or OTC drugs. =0)
