  • This does not even look like ratatouille...

  • dislike... the secret of aubergine... ask any expert you want... is to cook the vegetables separately with olive oil and then mix them together afterwards. Plus the ring while cooking is ... just disgusting to be honest.

  • I have done this recipe twice...it is fantastics. I was tired of making vegetabke stew. I can feel the flavors of the crunchy eggplants and the other vegetables. Balsamic vinegar tip worked perfectly. Love the marinara sauce with white wine and the sweetness of red bell peppers. It really worth the time. I did not have fennel , I used a diced portabella mushr...fantastic! Thanks a lot !

  • it's so similar to italian Caponata. Serve this with a salmon topped with a basil pesto and it's amazing

  • For any roasted veggies with skin, once out of the oven, to ease removing skin, you can put it into a plastic bag. The skin loosens much more easily.

  • mmm....just add string bean, lima bean, bitter melon, okra, pork rinds, etc and voila - you get PINAKBET!

  • This is not ratatouille, is doesn't look bad, don't get me wrong, but it's defo not ratatouille at all; basil? balsamic? Tomato sauce? And I live in France and I've spent some time in Provence.

  • Guess what? This meal was so suddenly be my favorite dish. Because of the spectacular cg animation movie "RATATOUILLE" make me love this meal so much i can't wait to taste it right at the paris finest restaurant! Even i'm was the guy who don't like vegetables but for the ratatouille it's the true art of frence cuisine that makes me stunned when i first saw in movie! Thank you remy,liguini colette and rats to make this meal! I wish i could have meet chef remy someday...

  • when done right, it is so rich you won't miss the meat. It's fantastic and really good cold the next day.

  • I would say that as well, but I'm willing to try it as is, because let's face it, if the French do ANYTHING right, it's food.

    Personally I'd add some champingon mushrooms to this, brings the body up quite a bit.

  • I don't like peppers either but I do like this, if you make the confit byaldi version, the peppers cook down into more of a sauce before you add the vegetables and it's pretty good.

  • My mouth is watering....much like it did in the movie when Remy made Ratatouille near the end, lol. I've never actually tasted the stuff, but it looks really good!

  • Ratatouille is the hardest dish in the world- you throw a bunch of diced vegetables together and stew them for a bit with tomatoes. Zucchini, eggplant, bell pepper. If you don't have one of the three, just add a bunch of the other two. Hell, you could even do it just with bell peppers, though what you would end up with is really more of a pasta sauce. In fact, that's what ratatouille really is: nothing more than a glorified pasta sauce.

  • I had ratatouille in a can while living in Paris and despite it being in a can it was really, really delicious! I've forgotten how lovely it was. I'm eager to either make or find ready made ratatouille! :)

  • If you watch the special features on the Ratatouille DVD, there's a behind the scenes video where they show the real chef making the actual version of ratatouille that the animators based the dish on in the movie. It was fun to watch him make it. =]
