I worked in a factory for a couple of days one summer doing this kind of packing by hand in a massive warehouse. 12h stood on my feet, in the same spot, moving my arm in the same cycle... it's nasty. In the 50's & 60's, food handlers (at factories, in the service industry, etc) often (more often than today) wore masks, gloves, hairnets, and so on. Sanitation has obviously declined since.
