  • I was thinking about making these into muffinsfor my son's snack day at school. How long do you think it would take in the oven to bake? After looking at other similar recipes, they all vary in time.

  • @lvick3 Since I have never baked these as muffins, I would suggest that you start checking them at about 10 minutes to see if a toothpick comes out clean. Depending on the results, check at reasonable time intervals to insure that they will be perfect.

  • I just made this recipe and decided to just use 1 1/2 cups sugar, like you. Seems like it made it just the right amount of sweetness. I haven't used self-rising flour in years, but I just recently bought some and had a few ripe bananas. I just literally made it 1 1/2 hours ago and my family loves it! I have to say I really love the idea Lynn had in baking it in a bundt pan. I guess this is what also made it lighter than in a loaf pan. Thank you both for such a delicious recipe.

  • What's the ideal pan I should use, Betty? I don't want the batter to overflow when it's cooked

  • @laurysocheerful The ideal pan is a Bundt cake pan (The shape and size I used). Next is a tube pan, which is used for angel cakes a lot. If all you have is a rectangular baking pan, that will work. Don't fill any type of pan too full.

  • I just made this and it's in the oven. The batter was quite thick. It wasn't runny at all. I'm assuming this is normal, yes? Shame I couldn't see how your batter looked like. I once made banana bread before and it turned out too mushy. :/ I hope this is okay.

  • I use a blender to "mash" my bananas because otherwise I tend to end up with little chunks in my bread. Never thought of using a bundt pan! I love that! :)

  • I tried this recipe but cut all ingredients in half... Since then I've made this two more times. I'm going to make more tomorrow. I noticed that adding a little bit more bananas and adding no sugar still was sweet. I'm watching my sugar :)

  • Just made it, with the lesser amount of sugar. It was so easy and I liked the crusty top. I put the lemon glaze on it from your Banana Nut Bread recipe. It's cooled down to 80 up here in Ohio, so I can do some baking:)

  • Hi Betty! I was wondering, or hoping rather, that you would be willing to do a video on how to make a Philly cheesteak sub from scatch. It probably isn't hard but I just don't know how to get a great tasting sandwich when I attempt. I'm hoping that if you made a video on how to do it I could see where I mess up. :-)

  • Hi Betty,

    My banana-bread is in the oven right now!! My little daughter who is 4 years old, always eats the junior bananas. So I made the bread with those bananas. The only difference with normal bananas is that they are a bit smaller. The taste is the same.

    I've put in four of them, so I hope that's enough for this recipe.

    My best friend is sick at the moment and she loves bananas so I promised her to make your banana-bread. Maybe she'll feel a little bit better, after eating it.

  • Betty, We always mash 3 bananas and freeze them in a ziplock bag when we see they are going dark. That way we dont have to waste any if we are not ready to bake. Sometimes if my wife is busy she will freeze the bananas whole in their skins, and just mash them when she is ready to bake. We will be trying your new recipe soon. Thanks.

  • @TheMsKateMCS Yes, you can use plain white flour, but for each cup of plain flour, you need to add 1 1/2 teaspoons baking powder and 1/2 teaspoon salt.

    If anyone is interested, I too freeze my banana's when they are old but I pre-mush them and put in sandwich bags. Works really well & only takes a short time to thaw. :)

  • I love banana bread so much. That recipe looks fantastic, I've never cooked it before in a bundt pan. One tip I would like to share, when the bananas have gone past their prime, they can be frozen in their skins for baking with later. I've found it helps them "mush" up better too for use in a recipe. I just put the old bananas in an old bread sack and squeeze out all of the air and pop them into the freezer.

  • Betty, even if u couldn't cook a lick, I can look at your coffee and tell we'd get along just FINE!!! :):) There's nothing worse than coffee that's so weak, u can read the paper thru it, and your coffee looks larrapin' good too. I like my coffeee like I like my men......HOT and STRONG !!!!
