Hey I have a handful of in depth videos posted about the voice Over on the Mac and how to use it. the series is called "How to be blind" or search eyelessguy1987. I use voice Over every day.
Mac's latest revisions have DRM (digital restrictions management) that prevents the use of analog (CRT) and VGA input monitors, thuss, a way to wipe out the use of analog's completely for the use on mac hardware.
The PAC Mate is a Windows Mobile powered Pocket PC and I'm on the PAC Mate List. I've heard that the PACmate is VERY unstable under Windows Mobile 6 with PACmate Firmware build 6.1
The only difference between them is a lack of a dual graphics card setup (on the lower end) and a slightly different processor and Hard Drive configuration. Other than that, they both run the same OS (Mac OS X Leopard) so your finances will dictate the purchase.
I would say stick to Windows since the AT industry revolves around Microsoft and WIndows (sadly). The only device that doesn't is the Linux powered Icon and that has been told to work with Mac on the list, but it's not officially supported (yet).

The navigation is pretty good once you get through the learning curve - in some instances its EASIER than JAWS.
