Bacon does not release FAT -it releases BRINE - which looks white to start with and then turns black as it burns onto the bacon !! This makes for a burnt-salt flavour . I gave up frying bacon in favour of Micro-waving it !! This releases the brine onto the plate which is left behind when you lift the bacon off. The bacon tastes so much better like that too !! I fry eggs in olive oil and potato bread instead of white bread as it absorbs less oil
@domnal Look, I don't know where you read that, but bacon most certainly does release FAT. Brine is generally soduim chloride (salt) and water, neither one of those alone can create a fatty, oily substance. The only reason your bacon is turning black, has a burnt taste to it or is dripping in FAT once cooked is because you don't low how to fry or drain it properly.
