One thing I learned after katrina, you had better have a plan. The "off the cuff" thing will not be any good.

Meh. We are a post-Katrina family, and we did fine. The key is, don't do anything that forces you to rely on the government for help. We didn't and all turned out quite well. The house got f'lunked up, but we had insurance, as most thoughtful people do.
We also got a bunch of free food! We didn't need it, but the government was giving it away on every corner. So what the heck.
