They are gorgeous, very cute, I used to have pets rats, I've had 3 pairs altogether but became quite badly allergic to them so I can't keep them any more, :-( such a shame because they are really lovely, clever and affectionate pets to have, yours are beautiful, cherish them!

Rats generally shouldnt eat chocolate. But small amounts, like 1 chocolate chip as a treat is ok. Too much chocolate can make them sick. (kindof like dogs do).
If you can give one loads of time he will become very attached to you, where-as if you buy two they will become more attached to eachother, but still see you as a great friend, just depends on how much time you have.
If you get one then it is going to be very skittish and scared for a while and that will really slow down the "getting close to you" thing. Getting two rats will allow them to have company ALL the time even when you're asleep and they are most active, so its important to aim for two. Having two won't mean that they are less close to you, I've shared an incredibly close bond with both of these two, having two gives them that much more company, play fun and support :)
That's adorable! Your rats are awesome, healthy and smart little guys. I can tell the three of you have a really great bond. ^.^ The vid was very nicely done, too!

do rats naturally just take the pebbles out of the water like that? or did you have to teach them with treats to do it? it's really cute. they seem happy. :)

The shell is a clear winner ... especially if its floating it will always be plucked out as first choice ... Whiskey is VERY protective of his shell hehe.

Have you thought about capturing some cheeky moments, some of the cheeky and funny antics.
