@miinhdadream924 It keeps cooking when you take it out. I cook turkey to 160. I dries out quick. That turkey will be at around 175 or 180 by the time its rested. High Temperature=Dry Turkey

It still needs a good deal of rest time, so as to not serve dry turkey. Not rested meat, or bird, will lose a lot of the liquid once cut into.
