you should put a CVT (tourque converter) from the engine to the wheel. that should greatly increase the top speed and efficiency

Just put a regular U-Brake on the back wheel.

Hmm... you could use a "U" or "V" brake. Disc brake would work even better but it is more expensive. Driving style is important too(anticipate stops and try to avoid hard stops if possible). I use a combination of coaster and "U" brakes on my bike(doesn't do well with hard stops and skids).
