But plenty of one ups make it fairly easy.

I think Mario 64 veterans will find it easy too.

To get 60 is difficult for non gamers, while getting all with mario and luigi is difficult for gamers. It's perfect.

Do the actual levels get much harder as you get even more stars beyond 60 then?

No they don't, getting 121 stars with Mario and Luigi was still too easy. Nintendo should make a harder version.
