Tacos al Pastor are descended from Döner kebab, but are not at all the same. They are pork, and not much pork is eaten in those countries. They are adapted to mexican tastes, and have not "always been part" of the Mexican tradition, really only since the 1950's.
You're right Jimnick1. Originally would be lamb meat because Pastor in Spanish means Shepherd. Ottoman shepherds prepared and grilled lamb meat "shawarma" style.
Turkish and Arab Immigrants started coming to Mexico long time ago before the 50's. I would say they are one of the most ancient immigrant groups in Mexico.
Tacos Al Pastor have different styles, but Chilango style are the best.
'Tortillas calientitas hechas a mano' are a very important element to enjoy good Mexican tacos.
@jimnick1 It's a mystery to me why the Lebanese didn't use lamb just as it is used in Lebanon. Lamb is very popular in Mexico. In fact "barbacoa de borrego" is the Spanish version of Aztec deer cooked underground wrapped in agave leaves (I don't know of one Mexican that doesn't like this dish). So it's not that there weren't any lambs in Mexico. Don't get me wrong, tacos al pastor are really delicious, and it isn't impossible to find them in the US. Pricy, though, here in Phoenix: $2.50-3.00 ea.
