It is not the same as Kebab, it is based or if you will a variation, I would say the cooking is the most similar part, the rest is very different, we use pork, a lot of different kinds of pepper, and tortilla instead of bread o pitas...

Hahaha! It's nice to see a daring and brave American going to such lengths to get his tacos al pastor. By the way, the red color comes from the 2 kinds of dried chiles that go into the sauce: guajillo and pasilla. Achiote is a mix of spices among which are the red seeds of the small tree bixa orellana. It is used mainly in the Southeastern states of Mexico.

Mexico is a mega-diverse and ancient country. The Mexican culinary tradition is as diverse as the Mexican population. The Mexican nation is a mixture of everything with an own cultural identity. Some people in Mexico also call Döner kebab or Gyros "Arab Tacos".

You can get any kind of tacos in any Mexican Tianguis, Market or Bazaar. Al Pastor are my favorites. Mexico City is known to have the most diverse, delicious and exotic tacos.

And, It is actually an Ottoman or Turkish dish, brought By Turks, Syrians and Lebanese immigrants to Mexico. Lamb or Pork, flat flour bread or 'tortillas de maíz hechas a mano', spicy or not, it does not matter. Tacos Al Pastor have always been part of the 100% Mexican culinary tradition.

Tacos al Pastor are descended from Döner kebab, but are not at all the same. They are pork, and not much pork is eaten in those countries. They are adapted to mexican tastes, and have not "always been part" of the Mexican tradition, really only since the 1950's.

You're right Jimnick1. Originally would be lamb meat because Pastor in Spanish means Shepherd. Ottoman shepherds prepared and grilled lamb meat "shawarma" style.

Turkish and Arab Immigrants started coming to Mexico long time ago before the 50's. I would say they are one of the most ancient immigrant groups in Mexico.

Tacos Al Pastor have different styles, but Chilango style are the best.

'Tortillas calientitas hechas a mano' are a very important element to enjoy good Mexican tacos.

@jimnick1 It's a mystery to me why the Lebanese didn't use lamb just as it is used in Lebanon. Lamb is very popular in Mexico. In fact "barbacoa de borrego" is the Spanish version of Aztec deer cooked underground wrapped in agave leaves (I don't know of one Mexican that doesn't like this dish). So it's not that there weren't any lambs in Mexico. Don't get me wrong, tacos al pastor are really delicious, and it isn't impossible to find them in the US. Pricy, though, here in Phoenix: $2.50-3.00 ea.

There is anthropological evidence that tacos are at least 1000 years older than the discovery of America in 1492 A Kebab is a different product than Taco. If you thought that the use of a spiral roast is the link between tacos and kebabs, well spiral roast has been in use for almost all ancient cultures. Your definition of Taco al Pastor = Doner Kebab is wrong too 'doner kebab' refers only to a kebab made of lamb. Al Pastor is made of pork. Taco has hundreds of combinations is more versatile.
