  • since the skin is water tight wouldn't it be better to put the "butter mixture" UNDER the skin?

    seems the meat would absorb more.

  • You're right. This is always the logical question when coating chicken skin with anything. However, in this case the skin becomes almost a separate dish, and the juices created a dipping sauce for the tender, moist meat underneath.
