Of course you can see that occuring. Take viruses as an example (flu, HIV, etc.). They are changing quite fast. So do bacteria, who are becoming resistant against certain antibiotics after a while. Take insects like the colorado potato beetle, who have become resistant against certain insecticides.

This all is a result of random mutation and natural selection, i.e. DARWINIAN EVOLUTION.

the answer of why species cant interbreed (hipp and cat dont make a hippocat) is because of genetic drift. Essentially its the frequency at which an allele is present in a species. By process of natural selection a group that contains two groups of traits will split into 2 groups of only one favoured trait. species interbreed, therefore with two traits two species are now present from one pool of genes and can no longer breed with each other as their traits and genes are no longer the same.

look, when the planets were forming ( the planets, and everything else in the solar system) from a big ring of dust around the sun, the small primitive planetoids sucked up the dust, and later, broke up smaller bodies, leaving gaps between planets.

and if whole sive planets broke up, it formed asteroid belts(such as the kupiter belt, which probably came from a mars size planet, pulled apart from the gravitational forces of jupiter and mars).
