I think I don't like about the original Iron Chef is the how they pick the judges. Aside from Kishi who's a culinary critic and legit food critic every now and then, it appears that they just randomly pick people from the Hollywood box to be judges. They may or may not know much about food textures and stuff. I think Iron Chef America did something right in that they actually select food journalists to be their judges instead of random movie stars.
i think they pick those who are rich and often enjoy gourmet food, not randomly. in my opinion its good because a dish should be able to apeal to a variety of people instead of food journalists only. there is a lot more oridinary people than food journalists out there, ins't it?
I love the red bean-fatty rice dish, that's probably gonna turn out awesome. Altho, I must say, I don't get how the Japanese can easily eat food with fat like so... maybe I'm missing out. lol.
