chillis, stews, and succatash... there's a fine line of difference between them imhop. The problem I have is when starting with dried pinto beans. Need to use a pressure cooker or they are tough as nails. Even the crock pot doesn't seem to help.
I am sad that I can't send friends here anymore. I don't want them to take my word for it to buy his DVDs. I'd like them to see all his old videos, then buy the DVDs. I was going to buy them, but then he took all his videos down, now I kinda don't want to. I can refer friends, but they won't get a good idea of his instruction quality. I think it'd be better for his business to leave'm up!!!!!
I still respect him a lot, a guys gotta make a livin, but yeah. I know how ya feel. I just wish I could still refer friends and share his awesomeness.
I hear ya, I was lucky to find Chef Todd's videos back when he was still in the teens.. followed him along and learned all his methods. I think the DVDs would be worth it for somebody just getting started, they're entertaining and educational.
You needn`t cook the stuff to death! Put the pot on the back porch, or in the fridge for a couple days. Time is the factor here. Soups or stews (chilis) are always better old.
Chili has chili powder in it. Something with hot, or, at least spicy ingredients. No such thing as vegetarian chili. Veggies are political. Meat is for the people.

Good ideas. Must try bourbon some times. I usually use strong belgian beer or red wine for this kind of thing.
But, no cumin? :)
