They are wonderful. Expect some grittiness. For whatever reason, the scallops I have had have always had a bit of grit to them. BUT, the flavor is worth every bit. Do them, I do not believe you will be disappointed. Kinda like lobster medallions if you can imagine that.
CHEF JOHN, it would be greatly appreciated if you could make a tempura dish with tentsuyu (tempura dipping sauce). shrimp tempura, sweet potato tempura and so on.
this dish will kill me if I don't remove all the jalapenos and cayenne. Almost all of your recipes contain spicy things, so I have to de-spice/capsicum everything so I don't die xD sucks, wish I knew how spiciness tasted like without having to almost die. ]:

Chef John..... I fear that I would be unable to enjoy this recipe. A long time ago, on a dark and stormy night, my mother (who is a wonderful chef) made scallops for the first time....
and they were horribly overcooked and it was my first scallop ever.

its amusing to me how ppl develop these food phobias its pretty cute.. unless its something very unconventional like andrew zimmern's bizarre foods, good tasting food should mostly be appealing at least..
@xMrCustom24x scallops are a vegetable. they're actually a root vegetable like beets or carrots or turnips. they have an almost meaty texture. i used to grow scallops as a child. ah,the good old days. me and grandpa used to go out to the scallop vinyard bright and early every morning.
