  • that looks great except I do not like crab but I am sure that could be easily substituted.. I might try his take on salmon every time I get salmon at restaurants its dry and not very flavorful.. I suppose I could try to make it my self for once lol...

  • @holdthelight11 There is lemon in the vinagrette. Works as the acidic part of the preparation. Has some of the characteristics as vinegar, but obviously are not the same. I hope the info helps you. Sincerly, from a Culinary Arts student.

  • scoring that salmon is so hard. the skin of the salmon is so tough. you need a really sharp knife to nicely score it.

  • @brafs the "second" flip wasnt really THE flip, it was done so that the actual flesh of the fish wont be overcooked and to allow the skin to remain heated and crispy.

  • The thing I found gross was he touched the raw salmon as he put it in the pan then used the same hand to grab salt to season the fish with. Way to cross contaminate Mr. Ramsey.

  • @nursefuzzywuzzy well if your not so smart already you should know that you can touch raw samon and still be ok to touch the cooked samon becuase samon is a type of fish that can be eatn raw like in sushi so the fact is that it is ok to do wat he did

  • superb! Thank you Chef Ramsay! The recipe is versatile! For example, duck liver and pigeon breast or trout and deer, and the same recipe comes to mind now and just vegetables and fruit recipe: pumpkin caramel and fresh pineapple cooked on the grill!

    What is interesting about this seemingly simple recipe, is that each type of vegetable or meat is prepared taking into account conservation of flavor and nutrition at the same time of each component!

  • When I cook this I have problems with the skin sticking to the bottom of the pan. I wonder if I am using too high a temperature? It's an electric range and it doesn't seem to be good at maintaining a constant temp.

  • @SoftwareTheft your heat is too low and the pans not hot enough when you put it in or try dredging in flower or corn starch on skin before u cook it will keep it from sticking.

  • @SoftwareTheft I had the same problem with electric. You are probably doing it at too high a heat. Do you have little white stuff coming off of the salmon? That means you're cooking it at too high of a heat and too quickly, it also doesn't allow time to crisp up the skin. Also, to help the skin from not sticking, do not move it, do not do anything to it, until it's ready. Don't touch it. At all. Ever. Until it's ready. Also use a metal, thin spatula.

  • @DemonShuriken87 Cool, thanks for that. I do use a fish slice..but last time I cooked it in a fairly new cast iron skillet. Next time I'll use the thinner non-stick pan as well as lowering the heat.

    he's using a gas stove, but he's not turning on any heat

    he's just using the heat of the pilot light (which is always on) to maintain a very, very low but constant warmth and dryness in the oven

    it seems like its 1/2 way to a sun dried tomato

  • @kanetidus Chicken would work. Just make sure to get the skin crispy. I would probably leave out the crab though.

    hi, thats an easy one.

    in a bottle fill the ½ with oliveoil , the juice of 1 lemon or lime and then top of with water. i used to make it myself when i was working in restaurants and i still do at home.

  • I think the only reason why you would score salmon in that manor is so the people eating it don't have to chop at it.(it does cook quicker but that is irrelevant ) and as for him turning it over twice; he put the salmon back on it presentation side (skin) and took it off the heat immediately .............the guy knows how to cook.

  • @quivalla ->No, like he said...the reason is to prevent the salmon from curling up when cooking like a lot of fish does. The added bonus is that it allows the seasoning and oil flavors to reach more of the fish.

  • @mingdienasty :) I suppose the main function of the vinegar is to provide acidity. In this case, the acidity is provided by the lemon. Usual ratio of oil:acid is 3:1.

  • I just cooked my salmon like this, burned the hell out of it on the skin side, but on the other side it was pretty good.I just didn't eat the skin.I put some garlic in between the fish and pan, and some black pepper, and garlic salt, a bit of dried oregno too... what caused it to burn??? Was it the seasoning, or was the heat too high or what??

  • I made this for my girlfriend and she loved it! I recommend buying the salmon from Whole foods. They have great salmon. I bought the wild salmon, because I heard it's better than farmed ones.

  • @juggy2006 well, Ive got a degree in hospitality & spent around 4-5 years around commercial kitchens in 5 star hotels, Im telling you oil (saturated fat) and added salt is in almost every restaurant style dish..which is bad for cholesterol / blood pressure. Lot of foods already naturally contain salt..my concern is a lot of TV chefs use way too much salt and oil and people with sedentary jobs shouldn't eat that much oil /salt evday.(but that wouldnt concern you if you dont have sedentary job).

  • @juggy2006 And my point is, he isn't putting too much on. Your degree means nothing if you're not a chef, so you can't comment on his recipe. The fact is, if there truely was too much salt, your taste buds would immediately pick up on that, but i am sure that this salmon tastes amazing and isn't bad for your health. As far as nutrition is concerned i can say as a professional opinion as a chef that this dish is not bad for your health.

A lot of people would agree McDonalds also taste good, but the salmon wasnt my point. Yes, i have worked as a chef and Yes, a lot of chefs die early from heart disease and stress / heart attacks - partly the reason I dont anymore. (besides hospitality being one of the lowest paid industries)
