Also of course, the longer you cook them, the more shrinkage, so I like to do a high heat for a shorter time. AND, I think saving the salt for the end keeps them plumper because the salt isn't drawing moisture out while they cook.

I am always impressed with you girl. Going to try these! I didn't like sweet potatos as a girl for some silly reason but on many diets you can have them but not white potatos so they are now looking better to me lol. Plus as adult you like many things as a child you didn't.
I tried a bag of potatoe chips made from sweet potatoes the other day. They sure had a whole different taste than any conventional chip I'd had before, but I liked them a lot. These fries look pretty tastey too.

This video is not clear as to cooking time. Also 400 degrees sounds fine, though I'd seen other videos that bake at 450. Big difference.
