@djteac Stainless steel grades have a Vickers hardness in the low 200s, which is about equal to a Mohs hardness of 3.5 - 4.0. The Mohs scale goes from 1 - 10, and a 4 is about equal to fluorite. 10 would be diamond. So yes, stainless steel is pretty soft. And anybody who collects knives can tell you that.

this is not just water. For one of these cutters to go through steel there must be an abrasive added to the water. The abrasive used is normally garnet or aluminum oxide.
