Looks like a dusky-footed woodrat. I went through all the rodents on the Starr Ranch website, and compared sizes and ears. One other possible candidate was Botta's pocket gopher, based on size, but it doesn't have big ears!
The Wikipedia entry for "Peromyscus Californicus" says it has very large ears and is the largest of its species. It's main predators are weasels and barn owls.
But I'm having trouble getting past the notion that it's called a "California Mouse" Hard to think of the substantial creature in the clip as a mouse.
