  • Pinot Noir or a Merlot works fine too for this lamb dish.

  • I'm a fan of the rabbit bottle opener myself. It is pricy but it works very well and so far no tool is easier to extract the cork from the tool, aside from the co2 tool.

  • If you have a debilitating wrist injury, go for something stronger than wine.....like a good bourbon perhaps.....with a screw off cap of course.

  • I still prefer using the good ol' fashioned flat-waiter for opening wine. It just makes it seem a little more special. But to each their own.

  • First thing my culinary arts instructor taught us in Culinary Basics: "Never cook with a wine you wouldn't drink."

  • I've always wondered what this means. I mean, I'll be damned if I'm gonna put ANY of a $50 bottle of wine into a sauce--that stuff is going straight into a glass, do not pass go. And then there's the stuff that, literally, is gross--maybe even vinegar. But there's a heckuva lot of space between those two positions. And there are wines I wouldn't drink that are great for cooking. I hate shiraz--way too peppery to drink straight. But it is *awesome* in a sauce w/ meat--the pepper is a bonus.

  • While you shouldn't mind giving up a cup of the $10 bottle as long as you're drinking it, I find that a $3 shiraz or merlot from California doesn't hurt at all... particularly when you want to cook with more than just a cup or two. It's usually stainless steel aged to save winemakers money and you--the cook--off-flavors when cooking.

  • Just for clarity: California meritage wines are actually Bordeaux style blend and contain cabernet sauvignon, merlot. malbec, petit verdot, and cabernet franc, generally. The grenache, syrah and mouvedre of Cotes-du-Rhone are often found in other blended reds from California (or Washington) and is labled 'GSM' in most Austrailian bottling.
