As a nursing professor, placing the tubing behind the head in the case of ear ulcers is NOT incorrect. The principle is still the same. Do not apply continuous pressure behind the ears. From a patient cost and infection control perspective (how often are the ear cushions changed?) behind the head may be more optimal.

The first way she showed to place a nasal cannula is incorrect! If the patient has ear ulcers they should use gauze or ear cushions.
