the knuckleheads could've scratched a deal if they dialed down the arrogance, and put their heads together to form a serious business plan, and spoke in more polished words

There's the botanical definition of fruit and there's the common understanding of the word fruit. Tomatoes are used as vegetables and lack the sweetness of traditional jam fruits. Add enough sugar to celery and you can make celery jam. The same prejudice that would prevent people from buying celery jam would apply to tomato jam which means few sales no matter how good.

The beginning of the pitch was strong, the "dragon's" appeared intrigued by the product (they also appeared more enamored with Steven Harper's chef). The pitch began its fiery crash to the ground when the brothers became more arrogant than their experience allowed. It was also a bad idea to insult the judges by saying "any educated person knows tomato is a fruit". These judges are clearly highly educated, and their advice to snort the jam instead might be worth looking into.
