After you do the adrenaline dodge, wait for the centaurs to stumble and expose their shields.  Then you can pull the shields away from them.

I enjoy battling these two its quite fun as the battle is a puzzle as well with the whole shield thing lol The PS1 centaurs were easy compared to this though.
