  • Hi, that was really good recipe..^_^ , bt i hv one que. i brought heavy cream n i only used it in this recipe ..so can u tell me where else i can use this heavy cream...i know it is little odd que...:)

  • @saaz1997 : You can pour the cream into an ice-cube tray, freeze it and use the cream over time :)

  • Thanks for the great recipe! I did not soak the dal the night before; just pressure cooked it. You don't need the addition of butter as it is perfectly palatable without it.

  • After making this, i store the leftovers in a covered bowl in the refrigerator, but when i recook it the next day, it doesn't taste nearly as good. When i order Dal Maharani from a restaurant, it is still absolutely delicious when re-heated the next day. What am i doing wrong? Is there anything i can do?

  • @8Libertine8 : Dal Makhani is a dish that us usually served the next day - the flavors heighten over time. The only thing I can think of is that maybe your dry spices are not bold enough or maybe old...or try adding extra onions, tomatoes, ginger and garlic.

  • Can I use split urud daal if whole isn't available? And does that apply to all daal recipes?

  • @1slamicLife : You can, but the split Urad Daal cooks faster than the whole, so pl. keep that in mind.

  • Ahh, dal makhani. There's something about Punjabi dishes like this one that really hit the spot (it must be the richness!). This recipe is quite a bit different from other ones that I've seen but it turned out quite nice. Thanks for posting.

    You can add butter. Too much yogurt will change the flavor of the dish.

  • This is totally Unauthentic dal makhni recipe, probabbly one of the worst take on daal makhni I have ever seen. The ingredients that DO NOT go in are the tomatoes and onions ... and where is the desi ghee and butter?? remember it is called daal makhni and not "daal payaza tamatar le creme".

  • I have tried the same .... recipe with Masoor dal instead of kali dal .... and it tastes awesome and different from Kali Dal. Other can also try it.

  • I have some black beluga lentils - is this the same as urad dal? They are a bit oblong, not round like brown lentils.

  • Urad Daal (Black Gram Dal) is a little bigger and not the same as Beluga. WE have never tried Beluga so really can't comment...make a small batch, it may end up being the best recipe ever.

  • You cannot make cream, but you can make butter from cream. Cream is available in the grocery store. The texture of the dish will be a little greasy if you use butter and creamy if you use cream. The daal needs to be washed and soaked in water overnight. Then, you place it in the cooker.

    For a tender, soft dal people normally mash the daal after cooking it well. You have not mashed it. Will it not affect the taste ?

  • We like a little bit of texture, but you can mash it if you like.

    It is a volume measurement not weight so it will not translate to grams.

  • Any daal can be cooked without a pressure cooker, but it takes considerably longer. Just cook it in a heavy bottom pan and be sure to keep an eye on it and keep adding a little water at a time until it's tender. You can also use a crock pot or slow cooker.

  • You can cook on medium low heat and covered. You definitely have to keep stirring often and also keep adding additional liquid (water, stock, etc) as needed. It would take a couple of hours, but you'd have to keep checking the tenderness of the daal and take it from there.

  • No question is ever "dumb". It's better to ask. Not everyone has a weighing scale at home so we give our measurements in volume.  In the US, a cup is a standard unit of measure. You could use your standard tea cup for this recipe.

  • There is nothing wrong with mixing milk and yogurt. In fact, heavy whipping cream is also a milk product. Since you are looking for something to make the daal creamy, you could substitute Evaporated Milk instead of heavy whipping cream.

  • why unhealthy man?? daal is so good for you... i wonder why would u call it UNHEALTHY!!! Indian daals are all healthy...

  • You are right, daals are very healthy. However, since many recipes call for heavy cream (especially with Daal Makhani), a healthy daal inadvertently becomes loaded with fat and calories.

  • You can try tempering the yogurt before adding it in. To do this, add a small amount of the hot liquid or gravy into your yogurt and mix. Then add a little more and mix. You are trying to gradually raise the temp of the yogurt instead of all at once. Finally, you can add the yogurt back into the pot.

    Very nice video. I do have a question on mixing in yogurt. When I add yogurt, it ends up curdling and sometimes, I just have to throw it away. Do you have some tips to avoid this?

  • A restaurant in my town serves what they call Maah Dal. It's black beans, with a cream sauce and ground lamb (I think). It seems to have maybe cardamom in it too? The only texture is the beans and the meat. Otherwise it's smooth with the cream and possibly yogurt too. This looks like it's very similar. Is it? Or is Maah Dal something different? Thanks!
