@Rakloro beef stock is too strong. you gotta taste the fillet of beef. it's the pain part of the dish. if you nuke it with beef-stock flavour you won't taste a thing anymore. and you can tell he's using a really light chicken stock here. I don't recommand using capres on a steack though :-)
how does he add the stock? Tried this yesterday but when I added the stock it just evaporated immidiatly but if I would to cook the steak on a lower temp it wouldn't get seared properly. Should I use cold stock or let the pan cool down for a few seconds cause I thought when cooking steak you should have the pan as hot as possible since most home pits are not as hot as a proffesional one.
@philateliceun yes, dont lower the heat. keep the pan pretty hot and sear the way you always do. For the stock it shouldnt evaporate that quickly, maybe add more stock or the pan just might be a tad too hot. try adding more stock first.
yeah its called mis en place, if you cook you should know what it means. and hallnoats you obviously dont understand how to respect an excellent ingredient.
@hallnoats4ever Simplicity is called for in this dish because one doesn't want too many intruding flavours that would take away from the essence of the beef fillet.
Replace the Gremolata with Aioli adding finely chopped parsley and capers.... the rest is fine.
