I love the way you present your vids. I would like to know what camera and recording/editing system you use. The way you show the work area and not bounce allover the place is perfect. Do you record voice at the time you make the dish or dub it in later?

Actually it seems that most of the chocolate's cocoa butter came up to the surface. I'm not sure... I'm guessing... Have you tried the recipe with simple cocoa powder? Just to see how much fat comes up to the surface.

I might suggest a little chile pepper(dried red ground chiles powder if you like it spicy use crushed but add them when sauteing the onions) for a little bite and a deep dark rich flavor for an alternative..

You won't lose any weight by eating fatty short ribs, infact the fat u skimmed off won't change the fat content at all, the fat off the top is the good fat your body needs and isn't the fat you try to count when losing weight. Infact that fat is the fat that fills you up more, to help you lose weight quicker, and really can't be defined as fat, more like skim milk really. And if you think fatty beef, short ribs are the most fatty, with chocolate and salt than i don't trust you as a chef at all.

@foodwishes i think b68851 is very confused about fats... personally i dont really care about gaining weight when it comes to cooking. ribs stil have fats in them after being slow cooked... and skimming the rendered fats off the top generally improves the mouth feel and looks of the sauce
