That looked like a 12 to 14 pound turkey i can't bake one in my gas oven in 3 hours how can you barbeque it in 3 hours hotter i guess??Sure want to give that a try on my grill sure looks tastey mmmm!!

Where did you get that holding cage that you cooked it with? Try setting the coals in the rails before lighting them. It works great for me. Nice looking crispy skin on that bad boy!
I would have used two 25-briquette chimmeneys, and the optional coal side baskets (from Weber) with a drip pan. And smoked damp hickory over the coals (or whatever you like) BUT... the garden hoe routine, a bit much for anything less than a 5-foot bonfire. Get some gloves, and a couple swipes with a large flat blade spatula would have divided the coals.
What I might suggest is that maybe next time you should place a small aluminum pan filled with water or apple juice,for added moisture I gathered this idea from barbecueweb on youtube! It makes sense since similar to smoking meats! maybe add some wood chips. Try it sometime if you can. THX 4 posting!

thats awesome. We have the same grill, so, this gave me GREAT ideas. Wouldn't of thought of moving the charcoal over to the side like that. Thanks!

it looks kinda dry from the grill... maybe you should add a pan of cola in while cooking, you know, for it to steam.
anyway, i wouldn't have the time to cook... i work for the missle silos, protecting America!
