  • i'd really like to add my hard butterscotch crushed to shortbread cookies for a bit of added crunch. do you have any advice so that my cookies don't go terribly wrong? like make the butterscotch pale (cooked for less time) so that i don't have black butterscotch in my cookies :P! or perhaps it's just not a good idea? also do you know if corn syrup is necessary? because if it's just something think and syrupy i have molasses and honey. can i use one? which one would be better? yay! thank you!

  • Looks wonderful! So easy to make. I need to get a candy therm. I only have a meat-type one without the little clip. Could I use a metal clip to secure it onto a pot?

  • @JessicaPersonalChef Not sure if would work correctly or not. I have a meat one here but I do not recall using it. I certainly use a candy one though as it makes a big difference with the sugars. They are fairly cheap. Usually in the supermarkets. With candy, the temperature can change really quick. I last made these at xmas. I enjoy hard candy too (making it more than indulging) as different types can be easily made (I have a peppermint, green candy posted somewhere). cheers, KtC

  • Yes certainly. Corn syrup is basically a corn starch 'liquid glucose'. There are many types of liquid glucose produced throughout the world. Look for any 'glucose liquid syrup'. It is available in your part of the world either produced within Romania or imported from nearby. Check the baking section of the store. Let me know how it works out for you. cheers! KtC

  • You may be surprised. I never had much luck with candy but the primary secret is the 'thermomter'. Some can get by with practise without it but makes it so much easier with it. I am certain this wouuld turn out for you. 'please try'. yummy. cheers! KtC

  • This is a basic recipe. If you wanted toffee your close. It would include a heavy cream and be cooked just until the 245F. The toffee is poured and cooled a bit. It is then (messy) pulled/ worked by hand until a smooth shine is evident. mmmmtasty. cheers! KtC

  • Sorry you definetly need it for basic candy. The liquid glucose this time. Just won't work without it. You could investigate an alternative but I have not seen a no-corn syrup recipe. Let me know if you do. cheers! (do you have an allergy or something for corn syrup or is it just difficult to find. Some candy use a light, others a dark syrup. KtC

  • i'm from india too the equivalent of corn syrup would be glucose syrup ..i don't know how easily its available but i've seen sanjeev kappoor use it

  • I see. Corn syrup is a mix of starches and glucose. Used for cooking. Look for a similar cooking product primarily made of glucose. Candy is made in India too, so it is probably common. Let me know. cheers! KtC

  • Im not sure they would actually taste like butterscotch...maybe like vanilla?or caramel candys

  • Toss really quickly (a bit at a time) over popcorn. Might be too hard. It would work though. Perhaps try the caramel sauce in 'Apples and Caramel/ #137' The sauce thickens ideal for popcorn. The recipe is easy everything is one part each. nice tip! KtC
