i'd really like to add my hard butterscotch crushed to shortbread cookies for a bit of added crunch. do you have any advice so that my cookies don't go terribly wrong? like make the butterscotch pale (cooked for less time) so that i don't have black butterscotch in my cookies :P! or perhaps it's just not a good idea? also do you know if corn syrup is necessary? because if it's just something think and syrupy i have molasses and honey. can i use one? which one would be better? yay! thank you!

They are fairly cheap. Usually in the supermarkets. With candy, the temperature can change really quick. I last made these at xmas. Yes certainly. Corn syrup is basically a corn starch 'liquid glucose'. There are many types of liquid glucose produced throughout the world. Look for any 'glucose liquid syrup'. It is available in your part of the world either produced within Romania or imported from nearby. Check the baking section of the store. Let me know how it works out for you. cheers! KtC

This is a basic recipe. If you wanted toffee your close. It would include a heavy cream and be cooked just until the 245F. The toffee is poured and cooled a bit. It is then (messy) pulled/ worked by hand until a smooth shine is evident. mmmmtasty. cheers! KtC
Sorry you definetly need it for basic candy. The liquid glucose this time. Just won't work without it. You could investigate an alternative but I have not seen a no-corn syrup recipe. Toss really quickly (a bit at a time) over popcorn. Might be too hard. It would work though. Perhaps try the caramel sauce in 'Apples and Caramel/ #137' The sauce thickens ideal for popcorn. The recipe is easy everything is one part each. nice tip! KtC
